Le peintre Marcel Sahut (1901-1990),-fils et petit-fils de tailleurs de pierre volvicois-, et sa femme Yvonne donnent en 1985 leurs collections personnelles à la commune de Volvic, ainsi qu'une grande partie de l'oeuvre de l'artiste. Le musée est inauguré le 30 mars 1988. Destiné à promouvoir l'oeuvre du peintre, le musée Marcel-Sahut se tourne également, et progressivement, vers les arts de la pierre, notamment ceux de la pierre de Volvic. Le musée est installé dans la demeure d'une ancienne et noble famille auvergnate, le «château de Bosredon» (XVIIIe siècle, inscrit MH), un écrin patrimonial tout en pierre de Volvic.
