A partir de 1914, Alfred Douët décide de restituer à l'ancienne Maison Consulaire de Saint-Flour son intégrité historique et sa magnificence. Il entreprend alors l'achat des bâtiments (de 1914 à 1928), obtient leur classement au titre des monuments historiques (30 avril 1928), et engage leur restauration au début des années 1930. Mais Alfred Douët ne s'en tient pas à la seule réhabilitation architecturale, et entreprend dès lors de rassembler des collections d’œuvres d'art pour restituer au monument une splendeur disparue. En 1948, alors que l’œuvre touche à son aboutissement, il rédige son testament léguant à la Caisse d’Épargne de Saint-Flour la maison consulaire et l'intégralité des collections qui s'y trouvent, à charge pour elle d'en faire un musée qui portera son nom. Alfred Douët décède en 1952, mais il faudra attendre le 6 mai 1968 pour que le musée ouvre ses portes au public, la veuve du donateur ayant l'usufruit de l'immeuble. La Caisse d’Épargne, à partir de 1988, signe une convention confiant à la ville de Saint-Flour l'exploitation commerciale de l'établissement. En 2002, afin de faciliter la gestion de son patrimoine, la Caisse d’Épargne crée une fondation d'entreprise, la Fondation Caisse d’Épargne d'Auvergne pour l'art et la culture, qui a pour mission principale la conduite d'un projet de développement de l'établissement à long terme. Aujourd'hui, c'est la Fondation Caisse d’Épargne d'Auvergne et du Limousin pour l'art et la culture, qui, en partenariat étroit avec la ville de Saint-Flour, veille à la destinée du musée d'art et d'histoire Alfred-Douët.
